Famous flapjack sauce.

Good for flapjacks and pancakes.

Equal parts:

Mix while butter is still hot.

You can dip a leftover pancake right out of the fridge in this sauce, and it will drop you to your knees.

What's a flapjack?

Somewhere between a pancake and a biscuit.

Frontier hotcakes.

They are a little more untamed.

Something a cowboy would recognize as breakfast.

Maybe burnt a little.

Some might say it's a different name for pancakes.

But that's not true.

Flapjacks are different.

They are thicker, denser. Misshapen.

You'd smell them through the screen doors of a rambler in hot summer. Over the dense odor of iron and bacon grease. And grass cut yesterday.

Not like diner pancakes.

And I love diners.

God, I love diners.

But flapjacks are more low-rent. More country. More raw.

The person cooking them can't care that much, or they won't be right.

And honestly, the person eating them can't care that much either.

Because they are a little dry. A little thick. A little combative.

And that's why they need flapjack sauce.
